The secret to truly great filter coffee? A consistent brewing temperature. During the brewing process, the flavors are released in stages: first the fruity acids, then the complex sugar compounds (sweetness), and finally the bitter compounds.
If the temperature drops during brewing, as is the case with many conventional drippers, the water loses the energy needed to extract the sweet notes from the coffee grounds. The result: a flat or unpleasantly sour coffee.
